Vegetarian food is often regarded as bland and unappealing. Ones that work particularly well in curries are potatoes, mushrooms, onions, peppers, carrots, baby sweetcorn, aubergine, courgette, cauliflower, spinach, potato and for a change sweet potato. Why not also add canned beans, such as chickpeas or kidney beans for a different mouthfeel.
