Red Snapper with Black Bean Dressing 'En Papillote' - Serves 12
450g / 1lb Tilda Easy Cook Long Grain Rice
12 x 150g / 5-6oz Red Snapper Fillets
2 Bunches Spring Onion, Chopped
5cm / 2" Piece of Fresh Root Ginger, Peeled and Grated
8Tbs Black Bean Sauce
75ml / 3fl oz Sesame Oil
8Tbs Dry Sherry
8Tbs Orange Juice
Freshly Ground Black Pepper
2 Limes, sliced
- Preheat the oven to 200°C / 400°F
- Remove any skin from the fish fillets and place in a shallow dish
- To make the marinade, mix the spring onions and ginger with the sesame oil, black bean sauce, sherry, orange juice and black pepper
- Place the slices of lime over the fish fillets. Pour over the marinade, cover and chill for at least 1 hour, turning once
- Meanwhile, cook the rice according to the pack instructions. Drain and rinse under cold water to prevent further cooking. Cover and chill until required
- Lift the fish fillets out of the marinade and put to one side. Stir the marinade into the rice and mix well
- To make the parcels, cut 12 pieces of baking parchment about 38cm / 15” square. Divide the rice mixture evenly between the paper squares, placing it in the middle of each piece. Top each parcel with a fish fillet
- Bring up the corners of the paper to form a bundle. Tie with string and bake in the oven for 20 minutes
- To serve, untie the string and serve on a plate, in the paper, with a fresh green salad
